We live in one of the most advanced civilizations in human history, but we do not eat like we do.

Instead of enjoying long leisurely meals of carefully prepared foods with family and friends, we more often grab, gobble and run like primitives in a primeval forest.

Michael Olson Food Chain Radio – Where can we find time enough to eat at home?

Wait! I have to take that back. A few years ago I had the privilege of eating some meals with the Shipibo people who live along the Rio Ucayali, a headwater of the Amazon. The Shipibo had lots of time on their hands, and so our meals were long, drawn out affairs with music, dancing and much toasting with very interesting beverages.

And the food… Oh my goodness. I remember one meal made of a giant fish that had been harpooned in the river and baked in banana leaves over the coals with delicious vegetables and root starches.

It took hours and hours to eat that meal, but nobody was in a hurry to get the eating done because there was nothing for which to rush off. Everybody and everything was already there!

Back here in civilization, rich and poor alike seem most often to be in too much of a hurry to eat like the Shipibo, except on very special occasions.   And so we pause to ask…
