This thought, which we suspect occasionally touches everyone who loves food, recently ran up against a time-lapsed kitchen scene in a video documentary entitled “The Farmer and The Chef.”  This scene featured the activity of a restaurant kitchen during its rush.  When speeded up so, the movement in the kitchen resembled the frantic to and fro of a bee hive in high summer.

We wondered, ‘How does one keep that kind of intense activity moving forward in a profitable way?’  And thus we turn to the chef, and wonder… What ingredients must a chef bring to the restaurant table; how must the chef combine these ingredients to cook up a successful restaurant; and…
